Description
This product uses white cabbage, red beet shreds, carraway seeds, and salt.
In the initial fermentation the lacto-bacteria attacks the sugar in the beets. This causes an order of magnitude increase in the number of bacteria which quickly consume the beet sugar and then attacks the cabbage. This makes for a deeper and more flavored sauerkraut.
The color comes from the fermentation of the beets. Fermentation time takes 3-4 weeks.
